Ingredients
- 2 fillets of wild cod or other white fish
- 1 tbsp olive oil
- Juice of 1/2 lemon
- 1 tsp dried dill or parsley
- 1 courgette, finely sliced
- Sea salt and black pepper
Method
- In a covered frying pan, add olive oil and lay in cod fillets with courgette slices around them.
- Season with lemon juice, herbs, salt, and pepper.
- Cover and gently steam-fry over medium heat for 10–12 minutes.
