Ingredients

  • 2 fillets of wild cod or other white fish
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 1 tsp dried dill or parsley
  • 1 courgette, finely sliced
  • Sea salt and black pepper

Method

  1. In a covered frying pan, add olive oil and lay in cod fillets with courgette slices around them.
  2. Season with lemon juice, herbs, salt, and pepper.
  3. Cover and gently steam-fry over medium heat for 10–12 minutes.
