Ingredients
2 organic chicken thighs, skin on
Juice of 1 lemon
1 tbsp olive tapenade
1/2 courgette, sliced
1/2 red onion, sliced
1 tbsp olive oil
Salt, pepper, and oregano
Method
Marinate chicken in lemon juice, salt, pepper, and oregano.
Roast veg in oil for 15 mins at 200°C.
Pan-fry chicken until crispy and cooked through.
Serve topped with olive tapenade.
