Ingredients
- 1/2 head cauliflower, cut into florets
- 2 cups fresh spinach
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp olive oil or coconut oil
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp ground coriander
- 200ml coconut milk
- Salt and pepper to taste
Method
- Heat oil in a large pan and sauté onion, garlic, and ginger for 3–4 minutes.
- Add cauliflower, turmeric, cumin, and coriander. Stir well to coat.
- Pour in coconut milk and simmer for 15 minutes, until cauliflower is soft.
- Stir in spinach and cook for another 2–3 minutes until wilted.
Why it’s good for keto:
Cauliflower is a keto staple with very low carbs. Coconut milk and olive oil provide healthy fats. Spinach adds fibre, iron, and magnesium.
