Keto Creamy Cauliflower and Spinach Curry (vegan)

Cauliflower is a keto staple with very low carbs. Coconut milk and olive oil provide healthy fats. Spinach adds fibre, iron, and magnesium.

Ingredients

  • 1/2 head cauliflower, cut into florets
  • 2 cups fresh spinach
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp olive oil or coconut oil
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp ground coriander
  • 200ml coconut milk
  • Salt and pepper to taste

Method

  1. Heat oil in a large pan and sauté onion, garlic, and ginger for 3–4 minutes.
  2. Add cauliflower, turmeric, cumin, and coriander. Stir well to coat.
  3. Pour in coconut milk and simmer for 15 minutes, until cauliflower is soft.
  4. Stir in spinach and cook for another 2–3 minutes until wilted.
