Ingredients

  • 1 Chinese cabbage, chopped

  • 2 tbsp sea salt

  • 3 spring onions, sliced

  • 1 carrot, julienned

  • 1 tbsp grated ginger

  • 2 garlic cloves, minced

  • 1 tbsp chilli flakes (optional)

Method

  1. Soak cabbage in salted water for 2 hours. Drain.

  2. Mix cabbage with other vegetables and spices.

  3. Pack into a jar, pressing down to release liquid.

  4. Ferment at room temp 3–7 days, burping jar daily.

  5. Refrigerate when tangy.
