Ingredients
1 Chinese cabbage, chopped
2 tbsp sea salt
3 spring onions, sliced
1 carrot, julienned
1 tbsp grated ginger
2 garlic cloves, minced
1 tbsp chilli flakes (optional)
Method
Soak cabbage in salted water for 2 hours. Drain.
Mix cabbage with other vegetables and spices.
Pack into a jar, pressing down to release liquid.
Ferment at room temp 3–7 days, burping jar daily.
Refrigerate when tangy.
