Ingredients

  • 2 Organic eggs
  • Coconut oil
  • 2 tomatoes halved or chopped up small
  • Salmon, smoked or previously cooked and flaked up or Nitrate Free Bacon if your child doesn’t like Salmon
  • Walnut pesto to spread 
  • Herbs
  • Fresh coriander
  • A few grates of fresh turmeric or ½ tsp of dried turmeric
  • Optional: Chopped chives

Method

  1. Beat eggs all together with herbs and gently fry with coconut or avocado oil
  2. Add the salmon chopped-up very small or previously cooked flakes of salmon to the eggs for added protein and fats. Add the Nitrate-Free Bacon if your child doesn’t like salmon.
  3. Add in turmeric powder or grate it fresh to have anti­ inflammatory yellow eggs.
