Ingredients

  • 2 wild salmon fillets

  • 2 cups spinach

  • 2 sweet potatoes, peeled and chopped

  • 1 tbsp olive oil

  • Sea salt, pepper, and lemon juice

Method

    1. Grill salmon for 10–12 minutes until cooked through.

    2. Boil sweet potatoes and mash with olive oil.

    3. Sauté spinach until wilted.

    4. Serve salmon over mash with spinach and lemon juice.

    Why it’s good for eye health:
    Salmon provides omega-3s and vitamin D, vital for retinal health, while sweet potatoes contain beta-carotene for night vision.
