Ingredients

  • 200g dairy-free halloumi-style cheese (e.g. Violife Mediterranean Style)

  • Cherry tomatoes

  • Courgette slices

  • Red onion chunks

  • 1 tbsp olive oil

  • 1 tsp dried thyme

Method

  1. Alternate veg and cheese on skewers.

  2. Brush with oil and thyme.

  3. Grill or bake for 8 mins.

Why it’s healthy:
Balanced fats and plant-based protein. Great alternative for dairy-sensitive vegetarians.
