Ingredients

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 1 cup brown lentils

  • 1 tin chopped tomatoes

  • 4 cups vegetable broth

  • 1 bay leaf

  • 1 tsp oregano

  • 1 tbsp red wine vinegar

Method

  1. Sauté onion and carrots.

  2. Add lentils, tomatoes, broth, bay leaf, and oregano.

  3. Simmer 25 minutes; remove bay leaf and stir in vinegar.

Why it’s good for mental health:
Lentils are high in folate and iron for oxygenation and serotonin production. Olive oil provides brain-protective monounsaturated fats.
