Ingredients
1 tbsp olive oil
1 onion, chopped
2 carrots, chopped
1 cup brown lentils
1 tin chopped tomatoes
4 cups vegetable broth
1 bay leaf
1 tsp oregano
1 tbsp red wine vinegar
Method
Sauté onion and carrots.
Add lentils, tomatoes, broth, bay leaf, and oregano.
Simmer 25 minutes; remove bay leaf and stir in vinegar.

Lentils are high in folate and iron for oxygenation and serotonin production. Olive oil provides brain-protective monounsaturated fats.
