Goji and Pecan Cacao Bars

Ingredients

  • 30 g Goji berries
  • 125 g pecan nuts
  • 125 g pitted dates
  • 60 g fresh or frozen cranberries
  • 1 tbs Chia seeds
  • 25 g Cacao powder
  • 2 tbs pumpkin seeds

Method

  1. Soak the goji berries in warm filtered water for 10 minutes, then drain.
  2. Place the pecan nuts in a high-speed blender or food processer until fine.
  3. Place the dates, goji berries and cranberries in a food processor and pulse gently to chop.
  4. Add chia seeds, cacao powder and pecan nuts, and process until the mixture forms a dough.  Mix thoroughly.
  5. Press the mixture into a tray lined with baking paper. 
  6. Freeze for 2 hours.
  7. Cut into 12 bars, it can be stored in the fridge in an airtight container for one week.
