Ingredients

  • 1 cup split red lentils

  • 1 tbsp grated ginger

  • 1 tsp turmeric

  • 1 can coconut milk

  • 2 cups vegetable broth

  • 1 garlic clove, crushed

  • Salt and pepper

Method

  1. Add all ingredients to a pan.

  2. Simmer 20 minutes.

  3. Stir often.

Why it’s good

Turmeric and ginger support antiviral defence. Coconut soothes the gut. Lentils provide fibre and minerals.
