Ingredients
- 2 organic chicken breasts, thinly sliced
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 small courgette, ribboned with a peeler
- 4–6 large romaine or cos lettuce leaves
- Sea salt and black pepper
Method
- Heat olive oil in a pan, add garlic and chicken slices, and cook for 6–8 minutes.
- Season with salt and pepper, then remove from heat.
- Quickly toss courgette ribbons in the warm pan to slightly soften.
- Fill lettuce leaves with chicken and courgette ribbons and serve immediately.
Why it works for warm weather:
No oven needed, light and cooling but still high in protein and satisfying.
