Garlic Chicken Lettuce Boats with Courgette Ribbons

Ingredients

  • 2 organic chicken breasts, thinly sliced
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small courgette, ribboned with a peeler
  • 4–6 large romaine or cos lettuce leaves
  • Sea salt and black pepper

Method

  1. Heat olive oil in a pan, add garlic and chicken slices, and cook for 6–8 minutes.
  2. Season with salt and pepper, then remove from heat.
  3. Quickly toss courgette ribbons in the warm pan to slightly soften.
  4. Fill lettuce leaves with chicken and courgette ribbons and serve immediately.

No oven needed, light and cooling but still high in protein and satisfying.
