Ingredients
4 organic eggs
1/2 courgette, chopped
1/2 red pepper, chopped
1/4 red onion, sliced
Handful of fresh basil leaves
1 tbsp olive oil
Salt and pepper to taste
Method
Preheat grill.
Sauté vegetables in olive oil until soft.
Whisk eggs, add salt, pepper, and torn basil.
Pour eggs over vegetables in pan.
Cook until bottom sets, then grill top until firm.
Slice and serve.
