Ingredients

  • 1 cup cooked quinoa

  • ½ cup chopped kimchi

  • 1 small avocado, sliced

  • 1 tbsp sesame oil

  • 1 tbsp tamari sauce

  • 1 tsp sesame seeds

  • 1 spring onion, sliced

Method

  1. Toss quinoa with sesame oil and tamari.

  2. Stir in kimchi and top with avocado, seeds, and onion.

Why it’s good for mental health:
Kimchi adds live probiotics that boost gut–brain communication. Quinoa’s B vitamins aid cognitive function and mood regulation.
