Ingredients
- 1 tbsp olive oil or ghee (see note)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 2 tsp Berbere spice blend
- 1 cup red lentils, rinsed
- 2 cups water or vegetable stock
- Salt to taste
Method
- Heat oil or ghee in a pan and sauté onion, garlic, and ginger until soft.
- Add Berbere spice and stir well.
- Add lentils and stock. Bring to a boil, then simmer uncovered for 25–30 minutes until soft and thickened.
Why it’s good for gut health:
Lentils are rich in prebiotic fibre and iron. Berbere spices boost circulation and digestion. Ghee (if used) supports gut lining integrity.
