Ingredients

  • 1 tbsp olive oil or ghee (see note)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tsp Berbere spice blend
  • 1 cup red lentils, rinsed
  • 2 cups water or vegetable stock
  • Salt to taste

Method

  1. Heat oil or ghee in a pan and sauté onion, garlic, and ginger until soft.
  2. Add Berbere spice and stir well.
  3. Add lentils and stock. Bring to a boil, then simmer uncovered for 25–30 minutes until soft and thickened.

 

Why it’s good for gut health:
Lentils are rich in prebiotic fibre and iron. Berbere spices boost circulation and digestion. Ghee (if used) supports gut lining integrity.
