Ingredients

  • Add your own ingredients
  • Use up last night’s veggies eg. onions, mushrooms, asparagus, spinach, broccoli, precooked sweet potato chunks.
  • Whisk 6 eggs
  • Add a splash of almond milk
  • Handful of chopped spinach
  • Optional – small amount of goat cheese

Method

  1. Preheat the oven to 350°F (176°C).
  2. Heat the oil in a small cast-iron skillet over medium heat. Place the veggies in the skillet and saute until soft, about six to seven minutes.
  3. Whisk the eggs in a Add the cheese and salt to taste.
  4. Pour everything on top of the veggies and give it a quick mix
  5. Place the skillet in the oven and bake for 30 to 35 minutes, until cooked to your liking. Remove, let cool for a few minutes and then slice and serve. Enjoy!
