Ingredients

  • 120g gluten-free pasta (e.g. brown rice or lentil pasta)
  • 1 small courgette, grated
  • 1 tbsp olive oil
  • 2 tbsp coconut cream
  • 1 tbsp chopped fresh basil
  • Pinch of sea salt

Method

  1. Cook pasta according to package instructions (approx. 10–12 minutes).
  2. Meanwhile, sauté grated courgette in olive oil for 2–3 minutes.
  3. Drain pasta and stir in courgette, coconut cream, basil, and salt.
  4. Serve immediately with extra basil if desired.
