Ingredients
- 120g gluten-free pasta (e.g. brown rice or lentil pasta)
- 1 small courgette, grated
- 1 tbsp olive oil
- 2 tbsp coconut cream
- 1 tbsp chopped fresh basil
- Pinch of sea salt
Method
- Cook pasta according to package instructions (approx. 10–12 minutes).
- Meanwhile, sauté grated courgette in olive oil for 2–3 minutes.
- Drain pasta and stir in courgette, coconut cream, basil, and salt.
- Serve immediately with extra basil if desired.
