Ingredients

  • 1 courgette, grated

  • 1 carrot, grated

  • 1 egg (or flax egg for vegan)

  • 2 tbsp chickpea flour

  • 1 tbsp olive oil

  • 3 tbsp coconut yoghurt

  • 1 tsp fresh mint, chopped

Method

  1. Mix grated veg with flour and egg.

  2. Form patties and fry 3 mins each side.

  3. Mix mint yoghurt as a dip.

Why it’s good for eye health:
Courgettes and carrots are rich in beta-carotene, while mint yoghurt provides cooling probiotics that benefit the ocular microbiome.
