Ingredients

  • 2 courgettes, chopped
  • 1/2 onion, finely chopped
  • 1 tbsp olive oil
  • 1 cup filtered water or vegetable broth (low histamine)
  • Handful fresh basil
  • Pinch of sea salt

Method

  1. Sauté onion and courgettes in olive oil for 5 minutes.
  2. Add water, bring to a simmer and cook for 10 minutes.
  3. Blend with basil and a pinch of salt until smooth.

 

Why this is good for lowering histamine:
Courgette is easy to digest and low in histamine. Basil contains eugenol, which can inhibit mast cell activation and reduce histamine response.
