Ingredients

  • ¼ cup of spring onions finely chopped
  • ½ cup fresh coriander, finely chopped
  • 4 cloves of garlic crushed
  • ¼ cups arrowroot flour
  • 3 organic eggs – beaten
  • 1 tbsp fish sauce
  • 1/8 tsp freshly ground black pepper
  • 2 large organic corn cobs with kernels sliced off
  • 2 tbsp coconut oil
  • Added extras – mixed herbs, basil, coriander, poach an egg for on top for an extra treat

Method

  1. Combine all the ingredients except oil
  2. Heat the oil over medium heat, when hot (but not smoking) drop a large tablespoon of batter
  3. Cook on both sides until golden and crisp

 

Serve with any extras you prefer, salad, egg, salmon, grated veggie coleslaw are a few examples.
