Ingredients
- 250ml coconut water
- 200g watermelon, cubed
- 100g strawberries, halved
- 50g blueberries
- 2 tbsp pumpkin seeds
- 2 tbsp natural Greek yoghurt (or coconut yoghurt for dairy-free)
- Fresh mint leaves
Method
- Divide the yoghurt between two bowls.
- Arrange the watermelon, strawberries and blueberries on top.
- Sprinkle over the pumpkin seeds.
- Pour a small amount of chilled coconut water around the fruit.
- Garnish with fresh mint before serving.
Why it’s good
This refreshing breakfast is a colourful alternative to sugary breakfast bowls. Coconut water is naturally rich in potassium, while watermelon helps support hydration due to its high water content. Pumpkin seeds provide magnesium, an important mineral involved in muscle function, nerve signalling and electrolyte balance.
