Ingredients

  • 2 organic chicken breasts, cubed
  • 1 tbsp ghee or coconut oil
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp garam masala
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 200ml coconut milk
  • Salt to taste

Method

  1. Heat ghee or coconut oil in a pan and sauté onions until soft.
  2. Add garlic and ginger, cook for 1 minute.
  3. Stir in spices, then add chicken and cook until browned.
  4. Pour in coconut milk, cover, and simmer for 15 minutes.

 

Why it’s good for gut health:
Ghee supports the gut lining and is usually tolerated by those with lactose intolerance. Coconut oil is an excellent dairy-free alternative rich in medium-chain fats that support digestion and energy.
