Coconut Chia Pudding with Berry Compote

Ingredients

  • 4 tbsp chia seeds

  • 1 cup coconut milk

  • 1/2 tsp vanilla extract

  • 1 tsp maple syrup

  • 1/2 cup mixed berries (fresh or frozen)

  • 1 tsp lemon juice

Method

    1. Whisk chia seeds, coconut milk, vanilla, and maple syrup.

    2. Let sit for 5 minutes, stir again, then refrigerate for 3+ hours.

    3. Simmer berries and lemon juice for 5 minutes, then cool.

    4. Top pudding with berry compote and serve.

 

Why it’s good for gut health:

Chia seeds are rich in soluble fibre and omega-3s, helping to feed beneficial bacteria. Berries provide polyphenols that support gut microbial diversity.
