Ingredients
4 tbsp chia seeds
1 cup coconut milk
1/2 tsp vanilla extract
1 tsp maple syrup
1/2 cup mixed berries (fresh or frozen)
1 tsp lemon juice
Method
Whisk chia seeds, coconut milk, vanilla, and maple syrup.
Let sit for 5 minutes, stir again, then refrigerate for 3+ hours.
Simmer berries and lemon juice for 5 minutes, then cool.
Top pudding with berry compote and serve.
