Ingredients
- 1 tbsp olive oil
- 1 small red pepper, diced
- 1 small yellow pepper, diced
- 1/2 red onion, finely chopped
- 1 cup cooked chickpeas (or rinsed canned)
- 1/2 tsp smoked paprika
- Sea salt and pepper to taste
Method
- Heat oil in a skillet and sauté onion and peppers for 5 minutes.
- Add chickpeas, paprika, and seasoning. Stir and cook for another 5 minutes.
- Serve warm or allow to cool slightly for a room-temperature dish.
