Ingredients

  • 1 tbsp olive oil
  • 1 small red pepper, diced
  • 1 small yellow pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cooked chickpeas (or rinsed canned)
  • 1/2 tsp smoked paprika
  • Sea salt and pepper to taste

Method

  1. Heat oil in a skillet and sauté onion and peppers for 5 minutes.
  2. Add chickpeas, paprika, and seasoning. Stir and cook for another 5 minutes.
  3. Serve warm or allow to cool slightly for a room-temperature dish.
