Ingredients

  • 224g ground almonds
  • 38g Chia Seeds
  • 38g ground flaxseeds
  • 40g coconut flour
  • ½ teaspoon Himalayan rock salt
  • ½ teaspoon bicarb of soda
  • 1 ½ teaspoon xanthan gum
  • 7 eggs 
  • 4 ½ tablespoons of olive oil
  • 3 tablespoons apple cider vinegar

Method

  1. Preheat oven to 170 c or Gas Mark 4

  2. Mix all dry ingredients together.

  3. In a separate bowl, beat eggs, vinegar and oil together.  

  4. Add dry ingredients to egg mixture and mix vigorously together.  Mix will thicken and become sticky. 

  5. Pour into olive oil-greased silicone or non-stick 2lb loaf tin.

  6. Bake for 50 minutes
