Ingredients

  • 2 cups cashews
  • 1 ¼ cup water or broth
  • 1-2 cloves garlic
  • 1 teaspoon salt

Method

  1. Place cashews in a bowl. cover with water and soak for about two hours. Drain and rinse thoroughly.
  2. Place the soaked cashews in the bowl of a food processor or blender with the water, garlic and salt puree until very smooth. thin out with more water to the desired consistency.
  3. Store in the fridge for 3-4 days or freeze.
  4. Use the sauce in lasagne or for cauliflower cheese
