Ingredients

  • 1 cup quinoa, cooked

  • 1 carrot, grated

  • 1 cup kale, shredded

  • 1 tbsp olive oil

  • Juice of ½ lemon

  • 1 tbsp pumpkin seeds

Method

  1. Toss cooked quinoa with grated carrot, kale, and olive oil.

  2. Add lemon juice and top with pumpkin seeds.
