Carrot Coriander & Red Lentil Soup


1kg carrots

113g red lentils

1 onion, chopped

1 litre filtered water

1 vegetable stock cube

Good handful of coriander (fresh)


Put all ingredients except coriander in a pan and simmer for 45 minutes.

Add coriander (keep a little for the garnish) and cook for couple of minutes.

Blend until smooth.

Divide between warmed soup bowls and serve garnished with chopped fresh coriander.
