Ingredients

  • Splash of Extra Virgin Olive Oil
  • 750g of Butternut Squash (peeled. chopped and cut into 1/2-inch pieces)
  • 100g Red Onion (chopped)
  • 2 Bell Peppers (colours of your choice)
  • 1tsp of Cumin
  • 2tsp of Chili Powder
  • 1/2tsp of Turmeric
  • 1/2tsp of Paprika
  • 250ml of Vegetable Broth
  • 400g of Chopped Tomato
  • 400g of Black Beans
  • Salt and Pepper to taste
  • Optional Sliced Avocado

Method

  1. Heat the oil in a large pot over medium Once hot, add in the squash, onion, and bell pepper and saute for five minutes.
  2. Reduce the heat to medium-low and add the cumin, chili powder, turmeric paprika, salt, beans, broth, and tomatoes. Simmer covered for 25 to 30 minutes, until the squash is cooked through and some of the liquid has reduced.
  1. Season with salt to taste and divide into bowls, serve with optional sliced avocado and enjoy!
