Ingredients

  • 150g gluten-free pasta

  • 1 small head broccoli, chopped

  • 40g walnuts

  • 1 garlic clove

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt and pepper

Method

  1. Cook pasta as per packet instructions.

  2. Steam broccoli until soft.

  3. Blend broccoli, walnuts, garlic, oil, and lemon juice.

  4. Stir pesto into cooked pasta and serve.

Why it’s good:
Broccoli and walnuts contain anti-inflammatory antioxidants. Olive oil provides healthy fats.
