Ingredients

  • 2 cooked beetroots, sliced

  • 50g soft goat’s cheese

  • 30g walnuts

  • Handful of rocket leaves

  • 1 tbsp balsamic vinegar

  • 1 tbsp olive oil

Method

  1. Arrange rocket on plates.

  2. Top with beetroot, goat’s cheese, and walnuts.

  3. Drizzle with balsamic and olive oil.

Why it’s good:
Beetroot improves blood flow. Walnuts and olive oil reduce inflammation and support brain health.
