Ingredients

  • 4 eggs

  • 1 cup baby spinach

  • ½ cup cherry tomatoes (halved)

  • 1 tbsp olive oil

  • Salt and pepper

Method

  1. Preheat oven to 180°C.

  2. Sauté spinach and tomatoes until softened.

  3. Transfer to baking dish, crack in eggs, bake for 10–12 mins.

Why this is good for mental health:
Eggs provide B12 and choline, which support brain health and memory. Spinach adds magnesium.
