Baked Bacon and Egg Cupcakes

Ingredients

  • Coconut oil, butter or ghee for greasing
  • 6 rashes of nitrite-free bacon (can remove for veggie)
  • 12 eggs
  • Chopped chives
  • A hand full of chopped Spinach
  • 3 cherry tomatoes chopped
  • ½ red onion finely chopped
  • Optional- broccoli fleurets part cooked during dinner and kept in the fridge

Method

  1. Fry or grill the bacon and chop into small sections
  2. Preheat oven to 180° Lightly spray a 12-cup capacity muffin tin with nonstick oil spray.
  3. In a large bowl, whisk together eggs and Season with salt and pepper, to taste and any other optional ingredients
  4. Add egg mixture halfway up into each tin of a greased muffin tin.
  1. Bake for 20 minutes
