Ingredients for Salsa

  • 1 large ripe avocado, diced
  • 3 tomatoes diced
  • ½ small red onion diced
  • Salt and pepper to taste
  • Coriander chopped finely as an option
  • Juice of 1 lemon
  • Mix together and serve on the side

Ingredients for Fritters

  • 1 courgette, grated
  • Spinach, chopped
  • 6 spring onions, chopped thinly
  • garlic pepper
  • Zest of 1 Lemon
  • 3 eggs
  • 140g almond flour
  • Parsley and Coriander to taste

Method

  1. Grate courgette and place in colander
  2. Add in a pinch of salt
  3. Leave in a colander for 10 minutes
  4. Squeeze out as much of the liquid as possible with your hands
  5. Place courgette in a large bowl, add parsley, coriander, spinach, spring onion garlic pepper, lemon zest eggs and almond flour and mix well
  6. Cook fritters in a pan in medium heat with coconut, Ghee or avocado oil, flip to cook until golden on both sides, cook 1 first and if it doesn’t hold together add a little more almond flour
  1. Serve with salsa on the side
